Broiled steaks

• 1 porterhouse, New York, or sirloin steak 1 ½ inches thick
• salt, pepper and butter

Preheat oven to 350 about l0 minutes. Place meat on broiler rack 3 inches below moderate broiler heat. Broil 12 to 15 minutes for rare steak or 18 minutes for medium steak. Sprinkle with salt and pepper, turn over and broil 12 to 18 minutes longer. Place on hot platter, sprinkle with hot butter and serve.
