GORGONZOLA PUFFOVERS
INGREDIENTS:
DIRECTIONS To make batter, grease 12-3 in muffin cups. In med saucepan, over med-high heat, bring milk, cheese, butter and 6 T water to rolling boil, whisking until cheese melts. Remove from heat and stir in flour all at once. Return to heat and cook, stirring constantly until mixture pulls away from sides of pan, about 3 min. Remove from heat and with electric mixer, beat eggs, one at at time incorporating each egg thoroughly before adding next. Fill each muffin cup almost to top. (Batter may be covered with foil and held at room temp up to 2 hrs) Bake (425) 15 min. THEN (350) 10-15 min. Loosen edges with knife, Serve.
