Roast beef

INGREDIENTS:

• 5 to 6 lb. Rib roast of beef
• salt and pepper

Wipe meat with damp cloth, sprinkle with salt and pepper. Place on rack in pan and roast uncovered in slow oven (300) allowing 35 to 40 minutes per pound
