Stuffed Flank Steak

INGREDIENTS:

Have flank steak scored lightly crosswise. Sprinkle with salt and pepper, cover with flour and pound well. Combine bread cubes, onions, celery, sage and butter. Moisten with water and season with salt and pepper. Spread stuffing over flank steak, roll meat and tie or fasten edge with toothpicks. Brown in oil, add about ½ cup water, cover pan and cook in moderate oven (350) about 1 ½ hours or until tender. Baste meat occasionally.
