RICE AND SPINACH
INGREDIENTS:
DIRECTIONS Heat oil, and sauté shallots and garlic until soft, but not brown. Stir in rice. Cook for 2 min, stirring. Add tomatoes, salt, pepper and water. Bring to boil, cover and simmer for 35 min. Quickly stir in spinach, cook for 10 min.
Fluff with fork.
