SPAGHETTI With RATATOUILLE SAUCE

INGREDIENTS:

DIRECTIONS Heat oil in saucepan, fry onion 5 min, add garlic, zucchini and eggplant, cook for 2 min stirring occasionally. Stir in tomato paste, tomatoes, herbs and seasoning, bring to boil, simmer 20-30 min, stirring occasionally. Cook pasta, drain, Toss with sauce. Garnish with parsley and Parmesan cheese.
