SPINACH and EGG PIE
INGREDIENTS:
DIRECTIONS Line bottom of pie pan with ham. Bring slices up sides to make crust. Chop cleaned spinach and fill pie pan. Make 2 indentations in spinach bed at even intervals. Crack and place eggs into these spaces. Prepare roux with butter and flour. Add milk and cheese to make sauce. Pour over spinach pie.
Sprinkle with paprika or tarragon and bake (350) for 35-40 min until eggs are set.
