BUTTERSCOTCH PARTY CAKE

INGREDIENTS:

• 2/3 cp butterscotch pieces
• 1/4 cp water
• 1/2 cp shortening
• 1 cp sugar
• 3 eggs
• 2 1/4 cp sifted flour
• 1 t salt
• 1 t baking soda
• 1/2 t baking powder
• 1 cp buttermilk

DIRECTIONS Heat and stir butterscotch pieces with the water until pieces melt; cool. Cream shortening and sugar until fluffy. Add eggs one at a time, beating well after each. Stir in butterscotch mixture. Sift together flour, salt, soda and powder. Add to creamed mixture alternately with buttermilk, beating with electric mixer on low. Pour into 2 greased and floured pans. Bake (375) 25-30 min.
