FABULOUS FRUIT CAKE

INGREDIENTS:

• 1 1/2 cp golden raisins
• 1 cp chopped prunes
• 1 cp candied pineapples and cherries
• 1/2 cp chopped citron, orange and Lemon peel - EACH
• 1 cp orange juice
• 1 1/2 cp chopped walnuts
• 1 t cloves / 3/4 cp sugar
• 1 1/2 t plain gelatin
• 2 cp whipping cream
• 3 cp crumbed graham crackers

DIRECTIONS Chop raisins, blend with fruits, orange juice, walnuts sugar and cloves. Let stand overnight. Next day, heat fruit mixture, soften gelatin in 3 tsp cold water and dissolve in hot fruit. Cool. Whip Cream stiff. Stir into fruit mixture. Add 3 cp crumbed graham crackers. Mix well. Press into 8 in tube pan. Chill well. Unmold. Decorate with hard sauce: 1/3 cp butter, 1 cp confectioners sugar and cognac or sherry to taste. Optional walnuts and candied cherries.
