Baked Salmon New Orleans
| 1 teaspoon sugar | |
| 2 lbs. Whole salmon | |
| 1/8 teaspoon salt | |
| Dash pepper | |
| 1 clove garlic | |
| 1 red pepper pod | |
| 1 onion | |
| 2 ½ cups cooked tomatoes | |
| ½ cup olive oil | |
| 1 tablespoon vinegar | |
| 2 cups, uncooked potato balls (see recipe for potato balls) | |
| 1 cup mushrooms |
Brown sugar in pan, Sprinkle salmon with salt and pepper, place garlic and pepper pod inside. Mince onion fine, place onion and salmon in pan with sugar. Cover with tomatoes; add Worchester sauce, olive oil, vinegar and potatoes. Bake in hot oven (400 degrees) for 15 minutes longer or until fish and potatoes are tender.
