MUSSELS IN PEPPER SAUCE

INGREDIENTS:

• 30 fresh mussels (2 1/2 lb)
• 1/4 cp minced green pepper
• 1/3 cp minced sweet red pepper
• 1/4 cp minced red onion
• 1/4 cp oil
• 1/4 cp red wine vinegar
• 2 T snipped parsley
• 1/2 t salt
• 1/4 t red pepper sauce
• 1/8 t black pepper
• tortilla chips

DIRECTIONS Clean mussels, remove beards. Place in pan with 1/4 cp water. Steam until shells open 5 min. Cool slightly. Loosen meat and arrange mussels in half shells. Mix remaining ingredients, except tortilla chips. Pour over mussels, cover and refrigerate 2 hrs. Serve with chips.
