ORANGE ROUGHY With TARRAGON
INGREDIENTS:
2 T olive oil
juice from 1/2 lemon
salt & pepper
8 lg springs fresh tarragon
OR 1 1/2 t dried
1 lb orange roughy
OR other mild white fish
DIR: Mix oil, juice, salt, pepper and tarragon in microwave proof plate. Turn fish into mixture on both sides. Arrange on plate with thickest portion on outside, tucking under thinnest part of fillet for even cooking. Let stand 10 min to marinate. Cover fish tightly with plastic wrap. Microwave on high 3-4 min until done.
