Lemon Meringue Pie
Pie shell :
1 cup flour,
l /2 teaspoon salt,
½ cup shortening,
¼ cup iced water.
Mix gently, put dough on floured waxed paper, roll out with rolling pin, when circular and large enough for pie pan, pick up and
line pan with pie shell.Bake in 350 degree oven for 30 minutes.
Filling
¼ cup cornstarch
1 ¾ cup flour
1 tablespoon lemon peel, grated
¼ teaspoon salt
2 cups water
4 egg yolks, slightly beaten
½ cup lemon juice
1 tablespoon butter
In medium sauce pan, combine cornstarch, flour, sugar and salt. Mix well, gradually add water, stirring until smooth, bring to boil over medium heat, stirring occasionally, boil until shiny, approximately 1 minute, quickly stir some of hot mixture into yolks, add remaining and cook over low heat for 5 minutes,
Stir in lemon juice, peel and butter. Pour into baked pie shell.
