FROZEN EGGS
DIR: WHOLE EGG: Break and mix (not whip). To prevent graininess in the yolks, add 1 1/2 t sugar OR 1/2 t salt per cup of whole eggs. Package in vapor proof freezer bags.
ANOTHER OPTION: Mix several whole eggs and then place 3 T egg mixture in each part of an ice cube tray. After they freeze hard, remove and place in freezer bag. Each cube = 1 egg. SEPARATED EGGS: Whites can be frozen without any salt or sugar. Yolks, add small amount of salt OR sugar per 1 cp of yolks and stir gently. Use frozen eggs within 4-6 months for best quality.
