MUSSEL SALAD

INGREDIENTS:

DIR: Steam mussels with 1 cp water, white wine and onions for 3 min. Drain, cool and shell. In a bowl, combine lemon juice, parsley, olive oil, capers, mustard and black pepper. Add mussels, cover and marinate for 1/2 hr to 8 hours. Serve on a bed of lettuce.
