BLACK BEAN SOUP
INGREDIENTS:
DIRECTIONS Rinse and sort beans. Simmer with large onion 1 1/2 - 2 hrs. Heat vegetable broth (Use drained canned tomato juice) in another pot. Puree in batches, beans and add to broth. Heat oil in fry pan. Add 1 cp chopped onion and garlic and sauté. Put a little soup in blender, add onion mixture, chile powder and drained tomatoes. Puree and add to soup. Add vinegar to taste. Serve with tortilla pieces and sour cream.
