CORN CILANTRO SOUP
INGREDIENTS:
DIRECTIONS In stock pot, heat butter and olive oil. Sauté onion, garlic and cumin until onion is clear. Stir in peppers, cook until they start to soften. Add tomato, corn and chicken stock; reduce heat and simmer until flavors are blended. Salt to taste. Stir in cilantro just before serving. If the soup is too spicy, omit the jalapeno. Makes 4 servings.
