POTATO and LEEK SOUP

INGREDIENTS:

• 3 med potatoes
• 2 leeks, diced
• 1 cp chicken stock
• 1/2 T butter
• 1 t salt
• 1/8 t white pepper
• 1 1/2 cp thin cream or top milk
• 2 T chopped chives
• 1/4 t paprika

DIR: Pare potatoes, dice and cook with diced leeks, including part of the green tops, in stock for 20 min. Rub though a fine sieve and add remaining ingredients except chives and paprika. Reheat and serve garnished with chives and paprika. Serves 4
