VEGETABLE CHOWDER
INGREDIENTS:
DIR: In small bowl, cover tomatoes with boiling water. Set aside for 5 min. In 3 qt saucepan, bring broth and water to boil. Add potatoes, return to boil. Cover and simmer 12 min/until tender. Remove 1 cp potatoes, set aside. Blend remaining potatoes, return to saucepan. Drain and add tomatoes, reserved potatoes and remaining ingredients except salt and pepper. Simmer over low heat, stirring often. (10 min). Season with salt and pepper. Thin with additional water or milk if needed.
