ZUCCHINI BASIL SOUP

INGREDIENTS:

DIRECTIONS In large saucepan combine onion, garlic, basil, thyme and butter. Cook over moderately low heat, stirring until onion is soft. Add broth and zucchini, bring to boil and stir in rice. Simmer covered, stirring occasionally for about 30 min or until rice is tender. Stir in cream cheese. In blender, puree soup in batches transferring to a tureen. Season with salt. Makes 4 qts.
