BLUEBERRY MUFFINS
INGREDIENTS:
DIR: Preheat oven to (400). Oil muffin tin. Sift flour, baking powder, cinnamon and salt together on waxed paper. In med bowl, whisk egg and sugar until pale yellow. Add melted butter and milk. Mix well. Beat in lemon zest. Fold in dry ingredients and finally fold in berries just enough to thoroughly moisten them. Don't over mix or muffins will be tough. Bake 20 min, turn on to wire rack and let cool 5 min before serving.
