PITA BREAD

INGREDIENTS:

DIRECTIONS In large bowl, combine yeast and 1 1/2 cp. flour. Combine warm water, oil, salt and sugar. Add to dry ingredients. Beat on low speed of electric mixer for 1/2 min. Scraping sides of bowl constantly. Beat high speed 3 min. By hand, stir in enough of remaining flour to make a moderately stiff dough. Turn out on floured surface and knead. Cover, let rise 45 min., Punch down, Divide into 12 parts. Shape into balls and rest 10 min. Roll each on floured surface to 5 in circle. Place 2 in apart cookie sheet. Cover rest 30 min. Bake (400) 10 min. Remove and immediately wrap in foil to cool.
