MUSSEL CHOWDER
INGREDIENTS:
DIR: Boil mussels in 3 cps water for 3 min; Drain, cool, shell & reserve liquid.
In saucepan, sauté onions and garlic. Add mussel liquid, potatoes, carrots, salt and peppers. Cover and simmer for about 10 min or until potatoes are tender. Add milk and mussels. Heat but do not boil. Sprinkle with parsley and serve.
